Hot and Cheesy Corn Dip

During football season, some Saturdays we like to kind of forgo our normal meals and just tailgate in our living room as we watch all the games.  We get wings, make cheese dip, salsa and guacamole, brownies, etc., and just snack all day.  These are probably my very favorite days ever. :)
Anyway, this past weekend I was looking through my Pinterest Appetizers Board for a new dip recipe, found this one and tried it out.  And YEAH.  Not only is it totally gorgeous, but it's delicious.  I mean, any dip with three cups of cheese is good by me.  So I thought I'd share it today, and maybe you can make it this weekend!

Here's what you need:

2 cups shredded cheddar cheese
1 cup grated monterey jack cheese
2 Tablespoons chipotles in adobo, diced
1 can diced green chilies
1/2 cup mayonnaise
1/4 teaspoon garlic salt
1 can of corn, drained
1 small tomato (we used about a half a pint of cherry tomatoes instead)
cilantro (we didn't have any on hand, so we skipped this)
3 green onions
And here's what you do!
Preheat oven to 350 degrees.  Combine all ingredients in a small baking dish, except the cilantro, tomato and green onions.  
Bake for about 20 mintues, until melty and bubbly.  While the dip is baking, dice the tomato, green onions, and cilantro, and add to the top!  Serve with tortilla cups or fritos scoops!  Done!  Easy!  Delicious!

We ate this right out of the oven and hovered over it, it was so good.  And healthy too, since it has lots of veggies, right?! :) 

I hope you will try this out for your next tailgate or fall get together, or just a Tuesday night home happy hour by yourself!  Who needs a crowd to make something yummy anyway?!
