Pimiento Cheese and Sweet Chili Spread

When my mom was here helping us out last week, she was making dinner for us one night, and asked what we'd like to have.  I told her it didn't matter (everything she makes is good), but I wanted some kind of an appetizer.  So this suuuuuper easy spread is what she made for us, and she, Scott and I were all huddled over it, fighting for Pita chips, scarfing it down, it was so good.  So if you're looking for a yummy happy hour appetizer, or need a yummy treat to bring to the tailgate this weekend, try this one out!  Only three ingredients and a bag of pita chips or a box of Ritz, and you're  good to go!


16 ounces of pimiento cheese, homemade or store bought (we just used Kroger brand, since we were in a pinch, but the Palmetto Pimiento Cheese is definitely the best store-bought pimiento cheese there is.  And I'm really picky about pimiento cheese).
Bacon (we took a little shortcut and got the ready-to-eat bacon that you just microwave and it's done.  Easy.)
Frank's Red Hot Sweet Chili Sauce (you'll find it with hot sauces and wings sauce)
Pita Chips or Ritz Crackers for serving


Preheat your oven to 350 degrees.  Spread the pimineto cheese on the bottom of a small baking dish.

Cook bacon until crispy, crumble over cheese spread.  

Pour the Sweet chili sauce over the cheese and bacon until well covered. 

Bake for 15 minutes until cheese spread is warmed through and slightly melted.

And that's it!

Is the spread gorgeous?  Not particularly.  BUT.  Cheese and bacon with a sweet and spicy sauce?  Yeah, it hits the spot.  It really couldn't be much easier, and it is definitely a crowd pleaser!  Try it out with your friends and family, and tell my mom thanks for the recipe!
